Tripow Peppermint Holiday Bars
This Holiday Season treat your loved ones (and yourself!) with these decadent Chocolate Peppermint Holiday Bars!
- 8-9 Large Medjool Dates & ¼ cup Water
- 2 cups Almond Flour
- 1 cup Hazelnut Flour
- 1 cup finely shredded Coconut (pulse shredded coconut in Food processor for a sec)
- 1/3 cups Cacao Powder
- 1/8 tsp Pink Salt
- ½ tsp Vanilla
- 2 cups young Coconut meat (or soak shredded coconut for a few hours and drain)
- 1/3 cup Coconut Oil
- 1/3 cup Honey
- Pinch of Pink Salt
- Peppermint essential Oil to taste (about 10-12 drops)
- 1/4 cup Water
- 2tsp TriPow
- 1/4 cup Butter
- 1/4 cup Coconut Oil
- 1/8 cup Honey
- Peppermint essential Oil to taste (about 8-10 drops)
- 1/3 cup Raw Cacao Powder
- 1/3 cup Maple Syrup
- ¼ cup Coconut Oil
- ¼ cup Raw Cacao Nibs
In your Vitamix/Food processor blend up your Medjool dates and water till it’s a paste, then toss it into a big bowl & add in all of the other Base ingredients and mix well. Dump the mixture into a pan (a spring form pan will work best it you want a nice presentation) and press it down firmly, then put it in the freezer to firm up while you whip up the other layers.
Blend all ingredients together in your Vitamix/Food processor till creamy and smooth, then take your Base out of the freezer and spread Layer1 on. Don’t worry about washing your Vitamix between Layers...all the flavours and colors go together if you follow the steps so just keep on keepin on.
*Note: It takes at least 45min for this layer to firm up so go ahead and rest your weary legs before you prep Layer 2.
Again blend all ingredients in your Vitamix/Food Processor till creamy and smooth and pour this bright green Tripow and Peppermint Layer on top of Layer 1 and smooth it out carefully and evenly. Put this back in the freezer while you work on the topping.
*Note: Because this layer is thinner it will take about 15min for it to firm up
Again no need to clean the Vitamix, just toss these ingredients in, blend them up, and pour the topping onto the rest of your Layers, and spread it out evenly.
Sprinkle on the Raw Cacao Nibs and place the whole pan back into the freezer for a 2hours to set.
Once bars are set take out of the freezer and cut into squares for serving. Place all squares into and air tight container and store in freezer. They will last as long as no one knows they are in there ;-)
